Seasoning Recipe
The point to making your own seasonings is to avoid the salt and sodium that is put into the premade mixes. Sometimes there is also anti-caking or coloring additives in the premade mixes. I know that corn starch is often included from reading the ingredients on the packets. Nothing wrong with corn starch, just it's another thing that maybe does not need to be in there. That's up to you. For the butter chicken seasoning packet, there is maltodextrin added. Actually, the first

It's all about...Chicken
I do not eat red met (ie: lamb, beef, pork, rabbit, deer, bison, moose, etc.) What I DO eat is fish and fowl. Fridays are for fish, which is usually salmon, but sometimes mackerel or herring. That's for the Omega3's of course. Only once a week because of the concerns over mercury content, which are pretty low for that type of fish. Overcautious? Probably. Anyway - mostly I eat fowl. Which means chicken for me, because turkey only happens once or twice a year in my house. And

Canned Chicken ?
On a budget? Only feeding 1, 2 or 3 people? Wondering whether you should go for canned chicken or fresh? The simple answer to this question is: Yes, canned chicken is generally cheaper than its fresh counterpart. Canned chicken offers cost savings due to its longer shelf life and ease of storage, making it an affordable option for those on a tight grocery budget. Dr. Google says that if you buy the white chicken in a can that is packed in water, and then rinse it, that you ar

YUKA (and Zoe) Hates me
I use to think I was being a little more healthy by buying the "Lightly Salted" potato chips but those apps disagree. Dang. So, now the plan is to make my own French fries in the air-fryer and forego the potato chips altogether. Of course I will make my own dip using non-fat, plain, Greek yogurt. I will try to make it taste like tartar sauce because I use to love fries and tartar sauce. It will be good. I use to think I was being a little more healthy by buying the 'better'

What's weird is....
What is weird is that I do not remember blogging about this or even mentioning this, so I am not sure how this got out there. But, yes, this IS salad week. I am eating salads for lunch every day this week. Even on the (leftovers) weekends. So.....here are 4 of my salad recipes for the varied salads I am and will be eating for the week. I know many folks seem to think that doing a salad is eezy-peezy. I'll just throw together a salad and I won't have to cook. Well, not so fast

Back at it
What time does a duck wake up? The quack of dawn. So I am back to making up recipes again. I have plenty of recipes. I am not sure why I think I need to do new ones. It's the more creative side of me I think that steers me towards the thought of making up 'new' stuff. Anyhow, here's what I have so far: Chicken Quinoa Chili. I am thinking this would pair well with microwave cornbread. Ingredients will be: Some red bell pepper, onion of course, chicken (duh), Black Beans, P

The Struggle is Real
So apparently RSVP'ing back to a wedding invite 'maybe next time' isn't the correct response. LOL. I love those one-liners. So, yeah, the struggle. It applies to so many things in my little world. Let me start with my desire to move. I want to move. Yet, the thought of moving after this many decades is truly overwhelming. It would mean parting with a huge number of items, a whole lot of work, an expenditure I would not be pleased to put out and 'adjusting'. Rebuilding. Ugh

I am at it again
I have a bunch of those little OUI jars done and I think they are just so cute. You cannot microwave them unfortunately, but they are good for everything else. Anywho, I am making up recipes again. This time I am attempting to incorporate super foods into every single day of the week so I am grabbing those super foods that sound tasty to me and adding them up together and trying to come up with a complete 'dish'. I started with this: A salad made with Arugula (Rocket) as the

Just making stuff up
I have no explanation as to why I am making up recipes recently when I have plenty of recipes for plenty of dishes of all kinds. Just some weird urge to try different things I think. I am guessing it has something to do with Spring. You know how you want to spruce things up in the house, maybe do some spring-cleaning when the nicer weather hits? Maybe that is caused by the rays of sunshine coming in the windows and lighting up all the dust on things you couldn't see before.

White Bean and Kale Soup with Chicken
First, here's the recipe. (I hate those recipe blogs where they have tons of pics and go on and on about the ordeal of cooking it first and save the actual recipe for way down the page after many scrolling's, so not doing that here.) Ingredients: 2 TB EVOO [Extra Virgin Olive Oil] 1 can White Meat Chicken, not drained (12.5 oz can) 1 medium onion, chopped 1/2 tsp Garlic Powder 1/2 tsp red pepper flakes 3/4 tsp coriander 1/2 tsp cumin 1/2 tsp rosemary 2 cans white beans, (15.
