Back at it
What time does a duck wake up? The quack of dawn. So I am back to making up recipes again. I have plenty of recipes. I am not sure why I think I need to do new ones. It's the more creative side of me I think that steers me towards the thought of making up 'new' stuff. Anyhow, here's what I have so far: Chicken Quinoa Chili. I am thinking this would pair well with microwave cornbread. Ingredients will be: Some red bell pepper, onion of course, chicken (duh), Black Beans, P

The Struggle is Real
So apparently RSVP'ing back to a wedding invite 'maybe next time' isn't the correct response. LOL. I love those one-liners. So, yeah, the struggle. It applies to so many things in my little world. Just making stuff up
I have no explanation as to why I am making up recipes recently when I have plenty of recipes for plenty of dishes of all kinds. Just some weird urge to try different things I think. I am guessing it has something to do with Spring. You know how you want to spruce things up in the house, maybe do some spring-cleaning when the nicer weather hits? Maybe that is caused by the rays of sunshine coming in the windows and lighting up all the dust on things you couldn't see before.

White Bean and Kale Soup with Chicken
First, here's the recipe. (I hate those recipe blogs where they have tons of pics and go on and on about the ordeal of cooking it first and save the actual recipe for way down the page after many scrolling's, so not doing that here.) Ingredients: 2 TB EVOO [Extra Virgin Olive Oil] 1 can White Meat Chicken, not drained (12.5 oz can) 1 medium onion, chopped 1/2 tsp Garlic Powder 1/2 tsp red pepper flakes 3/4 tsp coriander 1/2 tsp cumin 1/2 tsp rosemary 2 cans white beans, (15.
