The Struggle is Real

So apparently RSVP'ing back to a wedding invite 'maybe next time' isn't the correct response.
LOL. I love those one-liners.
So, yeah, the struggle. It applies to so many things in my little world.
Let me start with my desire to move. I want to move. Yet, the thought of moving after this many decades is truly overwhelming. It would mean parting with a huge number of items, a whole lot of work, an expenditure I would not be pleased to put out and 'adjusting'. Rebuilding. Ugh.
Of course, that entails the ongoing struggle with my amateur hoarding. I say amateur because my 'haul' is nothing compared to the situations shown on those tv shows. I do not collect garbage. Well, at least not what I would call garbage. But then, someone else might think of it as trash. That seems to be what every hoarder says. That's not garbage!! heh heh.
I do not collect animals. There is plenty of walking space in every room. All that kind of thing that might make me more of a pro at the hoarding thing but does not apply to me. yet.
My trouble is primarily 2 things - sentimentality, and money. The deal with taking a picture of it then getting rid of it so that you can retain the memory of it without it taking up space does not work for me. I have lost so many pictures that meant something to me that the technique does not work for me. Then the money issue. I am not throwing away or giving away something that has not been used that I had to pay for. I am way too frugal for that.
So I keep things I would otherwise be able to part with if not for those two ideas.
Then there is the struggle with relationships. I know, everyone has one kind of issue or another with friends and family. That does not make it any easier to deal with, knowing that.
I'm not even going to bring up health stuff.
And now -- the recipe that was asked for. Recipes for butter chicken are all over the internet, but modifying it to line up with this diet can be a 'struggle'. Yup. There it is.
So I will give you the recipe along with the modifications and you do you. The struggle is real. (I really need to add this to my cookbook)
2 Tablespoons of Butter Chicken Seasoning * (Make your own instead of using a pkg)
1 Can of White Chunk Chicken, Drained (instead of chicken thighs)
EVOO
1 Can of Tomato Sauce (8oz)
2 Tablespoons of Butter or Margarine of choice
2/3 cup of (Whipping Cream/Heavy Cream) - use Nonfat, plain, Greek Yogurt instead.
1 pkg frozen Cauliflower (cook and place on the side instead of in recipe)
or alternatively use Cauliflower rice, instead of rice
Basmati Rice - cooked - Use Brown Rice instead -Brown Basmati Rice is expensive
Heat oil in large skillet, cook chicken until warmed through. (5 minutes). Add the butter. When butter melted add the seasoning and the tomato sauce. Cover and cook 5 minutes.
Uncover and add the cream, and cook another 5 minutes. Pour over cooked rice. Cauliflower on the side.
Recipe for *Butter Chicken Seasoning
1 Tablespoon coarse sea salt - (I use no salt at all, but you can)
1 Tablespoon onion flakes -(You can use dehydrated onion bits or onion powder
2 teaspoons garlic powder
1 teaspoons paprika
1 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon crushed rosemary
1 teaspoon parsley flakes (dried)
1/8 teaspoon red pepper flakes (I just use a pinch cuz I don't like heat)
Mix together well.
