It's all about...Chicken

I do not eat red met (ie: lamb, beef, pork, rabbit, deer, bison, moose, etc.) What I DO eat is fish and fowl.

Fridays are for fish, which is usually salmon, but sometimes mackerel or herring. That's for the Omega3's of course. Only once a week because of the concerns over mercury content, which are pretty low for that type of fish. Overcautious? Probably.

Anyway - mostly I eat fowl. Which means chicken for me, because turkey only happens once or twice a year in my house. And certainly NOT in the summertime. Not roasting a turkey in the hot season.

So I stock up on plenty of chicken recipes. Lentils and other legumes do a great stand-in for meat. So I do a bunch of recipes with those.

This week I am focusing on canned chicken as you probably noticed from yesterday's post about canned chicken.

Yes, it's a healthy choice and economical. For instance a package of 3 Tyson Brand, skinless, boneless chicken breasts at Walmart is $8.17. That's going to create one recipe.

One can of chicken is $2.64. You might need two cans so figure on $5.28 for the same recipe.

Anyway, I am emphasizing canned chicken these few days because it is an easier, cheaper way to go and in my opinion it's a better kitchen-safe choice. What I mean by that is that it is not raw meat that you have to handle carefully and guard against cross contamination. The canned chicken is precooked and does not need those precautionary measures.

So without further ado, here is another canned chicken recipe. If you let me know what kind of meal you are seeking I will post a recipe for that kind of a meal. Perhaps enchiladas, tostados, chicken casserole, sheet pan roasted chicken, chicken tortellini, chicken salad, chicken Caesar salad, chicken avocado wrap, chicken pasta, chicken tacos, etc.

Chicken Stir Fry (Quick - Easy - Healthy)

2 tablespoons EVOO, 1 medium onion thinly sliced, 2 garlic cloves minced, 1 red bell pepper thinly sliced, 1 can chunk chicken, rinsed, 3 tablespoons low sodium soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil. Plus 2 cups of COOKED brown rice.

Heat oil in large skillet about 1 minute or until it shimmers. Add the onion and cook for 3 to 4 minutes or until softened. Stir in the garlic and cook for about 30 seconds. Add the bell pepper and cook 2 to 3 minutes. Now add the chicken, breaking up any large chunks. Cook 2 to 3 minutes. Let it get a little bit brown. Pour in the soy sauce, the vinegar, and the Sesame Oil. Stir everything together well. Cook 1 minute more and remove from heat. Let it rest for 1 minutes to thicken off the heat. Then serve over the rice.

How many apples grow on an apple tree?
