I am at it again

I have a bunch of those little OUI jars done and I think they are just so cute. You cannot microwave them unfortunately, but they are good for everything else.

Anywho, I am making up recipes again.

This time I am attempting to incorporate super foods into every single day of the week so I am grabbing those super foods that sound tasty to me and adding them up together and trying to come up with a complete 'dish'.

I started with this: A salad made with Arugula (Rocket) as the base, with Blueberries, Walnuts, Red Onion, and Cheese Balls. Perhaps a Lemon Vinaigrette or a Balsamic Dressing.

The super foods are underlined. (You can thank Jules for the Red Onion in there.)

I think a salad like that would pair well with some sort of Barley Soup. You know, the traditional soup and salad combo.

What do you think?

That covers the nuts, the berries, and the leafy greens along with the whole grains in one meal.

The list of super foods includes 'oily fish', desirable because of their Omega 3 content. So I did the web search for all the fish classified as oily and the list includes salmon, sardines, mackerel, herring and trout. Sadly, it did not include any type of white fish, like halibut, cod or tilapia. I have not had trout in eons so I checked that out to see if it's available and how much it would cost to swap out salmon for trout. Not doable.

Fresh or frozen trout is not available. Tinned trout is only available as smoked trout in little sardine type cans and those little cans are quite expensive. I'll stick with herring on that front.

I don't just want to eat healthy. I want to eat healthy on a budget. So trout is out.

And much to my chagrin, tilapia is now on the bottom of my list. Phooey.
