What is weird is that I do not remember blogging about this or even mentioning this, so I am not sure how this got out there. But, yes, this IS salad week.
I am eating salads for lunch every day this week. Even on the (leftovers) weekends.
So.....here are 4 of my salad recipes for the varied salads I am and will be eating for the week. I know many folks seem to think that doing a salad is eezy-peezy. I'll just throw together a salad and I won't have to cook. Well, not so fast. My salads have cooked items.
1 - Caesar Salad with Chicken and 'stuff'
Chopped Romaine Lettuce + Croutons + Parmesan + Caesar Dressing + 1 can
White Chicken drained well + sliced Black Olives + 1/2 cup cooked brown rice
2 - Cherry Almond Salad
Chopped Leaf Lettuce or Butter Lettuce + Shredded Cabbage + Rubbed Kale +
Shreds of Red Cabbage + Shredded Carrots + Chopped Scallion + Dried Cherries
Slivered Almonds + Gorgonzola Dressing + Cooked Couscous
3 - Italian Salad
3 tablespoons extra-virgin olive oil + 2 tablespoons red-wine vinegar +
1 teaspoon Italian seasoning + ½ teaspoon onion powder + ½ teaspoon garlic powder + dash crushed red pepper + 2½ cups chopped kale + 1½ cups chopped green cabbage + 1 (15-ounce) can no-salt-added chickpeas, rinsed well
1 cup quartered cherry tomatoes + 1 small bell pepper, diced + 1 small cucumber, diced + ½ cup chopped parsley + 2 scallions, sliced + Rinsed White Beans
4 - Northern Star Salad
2 tablespoons cider vinegar + 1 tablespoon pure maple syrup + S&P
¼ cup extra-virgin olive oil + 1 large bunch curly kale, stemmed and thinly sliced (about 8 cups) + 2 medium Honeycrisp or Gala apples, unpeeled, roughly chopped + 1 medium hunk of Bok Choy, thinly sliced (3 cups) or Substitute +
1 TB Fennel Seeds + 2 cups cooked quinoa, at room temperature or chilled
½ cup slivered almonds, toasted + ⅓ cup fresh sliced Strawberries +
¼ cup crumbled blue cheese + Cooked Quinoa
