All last week I made a concerted effort to incorporate superfoods into every dinner of the week.
I have to admit that the Arugula Blueberry Salad turned out very good. It was tasty, crisp, and full of nutrition.
How did I know the superfoods? I just followed the list provided on the internet, which turns out to be very similar to the list provided by the class website FullPlateLiving.org. You can right click on the link to investigate that program if you have a wish to do that.
So here's the list:
Nuts and Seeds. Specifically - Almonds, Walnuts, Pecans, Chia Seeds, Pumpkin Seeds and Sunflower Seeds.
Berries. Primarily - Blueberries and Strawberries.
Leafy Greens. Arugula, Chard, Spinach, Kale, Collard Greens, Cabbage, Broccoli, Dandelion Greens.
Oily Fish. Salmon, Sardines, Mackerel, Herring, Trout.
Beans (all kinds) Lentils, Chickpeas.
Greek Yogurt.
Fruits and Vegetables.
EVOO (Extra Virgin Olive Oil)
Eggs.
The Grand 10.
I did not see sweet potatoes on any list that popped up. I was sure it was considered a superfood so I had to websearch it separately and here is the response I got:
Yes, sweet potatoes are considered a superfood due to their high nutrient content, including vitamins A, C, and B6, as well as fiber and antioxidants. They are known for their health benefits, such as anti-inflammatory properties and potential blood sugar regulation.
These nutrient-rich vegetables support heart health, enhance digestion, and fight inflammation. With vitamins, antioxidants, and fibers, sweet potatoes are a versatile ally in maintaining and improving your overall well-being.
So adding sweet potatoes to that list makes it the top 10.
I included sweet potatoes twice in our dinners for last week but we still have the sweet potato pizza left to go. Remember, my week starts Thursday. Well, it used to anyway.
I am still not back on schedule like I should be. Somehow that has turned into some kind of struggle for me and I really don't understand why.
One of the projects I am working on is decorating that chopped down tree, which is now a very tall (about 20 foot high) tree stump. I managed to get out and about this past weekend so I picked up a few things to decorate the tree. Jules is helping to get the hangars up on the tree so I can hang up the wind chimes and the wind spinners.
That kind of thing is so much fun for me. I love doing that kind of project. I get all excited over it.
Why aren’t koalas actual bears?
They don’t have the right koalafications.
