Switching to Green

Valentine's Day came and went and yes, I did eat chocolate. Cake that is. Homemade, of course. So this means that it is time to undo my Valentine Tree and redo the tree to Green for the upcoming Holiday/Month, that being St Patrick's Day.
Clovers. Shamrocks. Green bows. Green flowers. Green garlands. Gold coins. Green lights. Leprechauns. Cauldrons of Gold nuggets.
I really get a kick out of doing the Tree once a month. Can you tell?

So, this week's dinner menus are:
Turkey with Smashed Berries; Mashed Potatoes and Gravy and a side of Green Beans.
BBQ Tofu; Brown Rice and a side of Broccoli.
Black Bean CheeseBurgers with all the Fixins (lettuce, tomato, pickles, mustard) and air-fryer French Fries.
Lemon Salmon with Baked Potatoes (Greek Yogurt and Chives) with a side of Fruit Salad
Chicken N Noodles Casserole ( I will be inventing the recipe for this)
Now, I know that for those of you that are new to this style of eating that some of this sounds pretty 'out there'. When I read it back to myself I think to myself - Geez, right out of the hippie catalog for a flower child.
Yes, I really do eat this way now. That's a long way away from the Cheeto's and Pepsi for dinner thing that I sometimes use to do. A very long way.
I am healthier now than I was 40 years ago. Most of that you cannot see or even feel because it's hidden things like blood pressure, cholesterol, muscle tissue, that sort of thing. Some of it is out here though. The biggest of which is that the IBS is controlled. That's a big deal for me.
I spent yesterday printing out all the completed tax forms and the copies of the tax forms only to discover that I had a boo-boo. Geez Louise !!!
I saw a movie about how ships are put together.
It was riveting.
I also spent time yesterday working on envelope decorating. Here is how it turned out. Let me know what you think.
