4th of July turns out to be on a Friday this year. Finally, after how many years?
So ...today's menu (because we do fish on Fridays so that we remember to eat fish at least once a week) is: Lemon Pepper Salmon with Kale Berry Salad.
The salad as one might suspect has a base of stemless, torn kale then a cup of blueberries. Hence the name.
