Menus, Trying to Stay in Budget...arggggggg
Geez. It's getting tough to stay in budget these days. So I had to jiggle and jumble stuff to make this week's menus.
Then I get a call from one of my doctors who says she is not okay with my blood test results. Well, gosh. She wants me to start taking a new medication and after checking on it with Dr. Google I am concerned about taking that kind of stuff. (Side effects and such). Mercy me.
So, it's back to the basics again until my lab results come out nicer. This week's menus reflect that situation, as I am convinced that diet has a whole bunch to do with how our bodies function.
And then there is trying to use the wonderful produce harvested from the garden: Bell peppers, eggplant, tomatoes.
Last but not least add in the ingredients already in the pantry that need to get used.
Putting all those factors into play in this week's menus; budget, health, garden harvest and pantry stock. I did the work for you. So here's the menu list:
Homemade Pizza. (making your own dough, reduces sodium)
Hoppin' John Rotini (uses bell peppers from the garden)
Stir Fry Ratatouille (uses eggplants from the garden)
Rosemary Chicken and Roasted Potatoes (budget friendly and easy)
Lemony - Dill Salmon Fillets with Quinoa Salad
Did I ever tell you about the time I went mushroom foraging?
It’s a story with a morel at the end.
