Menus, Recipe, and Unavailable

It's a little frustrating when you plan a week's worth of meals and order groceries specifically for those meals and then get a text message telling you an item is unavailable and that item is essential to one of your meals.
Example: One of the meals planned for this week is 7-layer Nachos. The base for this meal are the 'lightly salted' tortilla chips. It was this item that was 'unavailable'. Argggggg.
Well, anywho, here is this week's dinners menu:
Thai Peanut Chicken Casserole with a Waldorf Salad
Lentil Stroganoff with Green Beans
Teriyaki Chicken Roast with Rice and California Veggies
Glazed Salmon with Baked Potatoes and Broccoli
7 Layer Nachos ----Hah! I'll figure that out.

Thai Peanut Chicken Casserole
Ingredients...
2 cans drained chicken breast
1 cup Thai peanut sauce **
1 bell pepper, sliced
1 cup coleslaw triple
2 cups cooked rice
1/4 cup chopped peanuts (optional)
Fresh green onions for garnish
Directions.....
Preheat your oven to 375°F (190°C).
In a large bowl, combine the chicken with the Thai peanut sauce, ensuring all pieces are well-coated.
In a baking dish, layer the cooked rice, followed by the bell peppers, and coleslaw.
Place the chicken on top of the vegetables.
Cover the dish with aluminum foil and bake for 20-25 minutes, or until the dish is heated through.
Remove the foil, and bake for an additional 5 minutes to allow the top to brown slightly.
Garnish with chopped peanuts and fresh scallions before serving.
**Thai Peanut Sauce
Note: you can buy this premade, but I rarely do that. You will need to make this ahead.
In a bowl, combine:
1/2 cup Peanut Butter
3 Tablespoons soy sauce (the low sodium kind)
1 Tablespoon ketchup
2 Tablespoons brown sugar
1 1/2 teaspoons sesame oil
1" ginger or 1/4 teaspoon dry ginger powder
2 Tablespoons water
Whip until smooth.
Now -- I need to get busy and figure out how to make 7 layer nachos, without the nachos...lol.
Geez.
At least the weather is cooperating with me.
I tried to catch fog yesterday.
