Hey there. It's Wednesday, so today is the day I order the groceries for the coming week and all the items needed to make the goodies on the menus created yesterday, plus all the usual daily stuff.
So without further adieu, here are this weeks menus:
Chili and Cornbread
Tilapia Fish, Air-Fryer Fries and Butter Peas
Black Bean Cheeseburgers with Buns, Fixins, and Chips
Chicken Fried "Steaks" , Country Gravy, Mashed Potatoes, and Green Beans
Sausage & Peppers with Orzo and Smashed Yams
The weekends are leftovers of all the above.
To answer a question posed, I eat the same breakfast 6 days a week which I have posted previously, but to spare you having to look through every post to find that, here is what I eat for breakfast, lunch, and snacks.
Breakfast: 2 scrambled egg whites + 1 whole egg, with tarragon and pepper sprinkled on top, 1/3 cup beets, and 1/3 cup navy beans. The other day is a veggie omelet.
Lunch: It can vary, but usually I have a chicken/chickpea salad sandwich, using Greek
yogurt instead of mayonnaise, horseradish mustard, etc.
Sometimes I have leftovers for lunch if there is not enough of something left to use for
a full dinner. In the winter I might have soup that I make just for my lunches using
recipes I have modified and gleaned from the labels of Healthy Choice or Progresso
Soups. For instance, Tomato Penne, or Italian Meatball or Potato Leek Soup.
So - also per request here is my grocery shopping list based on the menus above:
Chicken - Red Beans - Fire Roasted Tomatoes - Carrots - Tilapia - Bell Pepper (green) - Potatoes - Sausage - Sweet Potato - Burger Buns - "healthy" Chips.
I already have all the other ingredients, like black beans, celery, crushed tomatoes,
tomato paste, spices, etc.
It is time for me to order books as I am running out of reading material. I have a list of books that I would like to get. It's too bad our local library has given me such a hard time of it. I have not checked out a book in forever and I always returned every book I did check out on time but they still insist that I have a book out and I owe a whopping fine. Pressed, they tell me that the book was checked out just 2 months ago ---each time I inquire. How is that possible when it's been over 6 years since I even considered checking out a book? So, I do not make use of the local library which is a dirty rotten shame for a reader like me.
Yes, I know that I get 'free' e-books with Amazon Prime, but I have never read a book online and I am not sure I would be okay with that at all. So considering where my reading room is set up I am sure it would not work out.
So - I am off to stir up my breakfast, watch my show (Stargate SG1, for which I have to fight with Pluto to watch) and to get some decaf made. TTFN
My grandpa always said when one door closes, another one opens. Smart man but a horrible cabinet maker. (hee hee hee)
OR - When one door closes, open it. It’s a door. That’s what they do.
