July 15th, a Tuesday - Menu Day

So for dinner tonight (remember I did not plan menus for these last two days) we are having chicken mushroom gravy on mashed potatoes with a side of green beans. Or, chicken mushroom gravy on hot dog buns, baked potatoes with fixins and green beans.

So, here are this week's menus, (my week starts on Thursday). I create my menus on Tuesday.

I load up my grocery cart for a delivery order on Wednesday, and it's delivered Thursday morning.

Cheesy no-chipotle Cauliflower Mac. So this recipe originally asked for chipotle and paprika. I don't use either because I do not like "hot" spice. So that is why the title says no-chipotle. LOL. Anyway, you will not notice the cauliflower at all because it is pureed and melted in with the cheeses for the sauce. You want to make a nice green salad to go with it.

Next is Roasted Roots and Greens over Lentils. I like lentils so this is an easy pick for me. The roasted roots are a variety of root veggies, like beets, carrots, sweet potatoes, parsnips, etc. done in the air fryer. And the greens can be whatever you prefer, but the original recipe I wrote calls for kale. I have substituted collard greens before and like it, but you could also use beet greens or mustard greens.

Next is Cherazza aka Creamy Fettucine with Sprouts and Shrooms. This is pretty self explanatory I think, but just in case, it's fettucine noodles with sliced, roasted Brussels Sprouts, sliced mushrooms in a creamy sauce made with almond milk and flour and nonfat plain Greek yogurt. I throw in some fun herbs.

Last, for our Friday fish meal, is Fish Tacos. I'll be using Tillapia. And the taco shells will be homemade flatbread. I have used large leaves of Romaine lettuce before. It has shredded cabbage as part of the toppings. I buy the pre-shredded tri color coleslaw and save myself some work. You can serve these with brown rice.

So what do you think? If you noticed these were all meatless (except for the fish) recipes you were very observant. Just to be clear, I often add chicken to the fettucine dish.

I do eat fish and fowl, just no red meat, like lamb, pork, beef, rabbit, venison, and so forth.
