It's sign up time for Healthcare

These are uncertain times. After years and years we finally got a healthcare system to help folks get semi-affordable health insurance with the Affordable Care Act. Many folks call it Obama Care. Some states refused to adopt it but they were required to offer something in it's place if they did not. It certainly was better than what was offered previously, which was nothing at all if your employer did not offer insurance or if you could not afford the premiums at all. Now that imperfect but better-than-nothing plan is threatened.
Plus for those who have reached the age of 65 and are trying to sort through the maze of trying to sign up for Medicare, you have my sympathies there. That is akin to asking an older person to decipher the instruction manual for a VCR written in Lebanese.
Somehow people manage to get through this season while keeping up with the Holidays and all the other things we have to do come Autumn, like harvesting and leaf-raking.
Here's hoping you are doing well and the baffling times we currently deal with are treating you with dignity and reverence. I wish you all good things.
So - as promised, here are this week's menus. I am trying out a couple new things, so don't judge.
Loaded Cabbage Soup (mimicking the loaded baked potato)
Creamy white Chili (with white beans and sweet potatoes)
Teriyaki Chicken Skillet Casserole with Broccoli
Chicken and Mushroom Gravy on Baked Potato with Green Beans
Balsamic Glazed Salmon, Toasted Eggplant, and Couscous.
Cross your fingers I can pull it off because I am feeling some after effects with the recent COVID vaccine I received. Not complaining, just saying.
