Economizing
What do I mean by economizing? In this case, I am talking about using up what I have in order to save a few bucks and not waste any food.
So this week's menus include things left from last week's recipes and snacks and desserts, etc.
I really do not like to waste food, but I dislike wasting money even more and food costs money. (More money recently than before, even.)
So as I go through posting the menu items, I will explain a little bit so that you can supplement if needed.
Air-Fryer Egg Rolls stuffed with Chicken, Smashed Black Beans, and Chili Sauce
with Loaded Baked Potatoes and a Vegetable.
I have some egg roll wrappers leftover I will use for this, plus I have some black beans leftover that I will smash and spice up to use like refried beans. The Chili Sauce is really the leftover Enchilada Sauce, kept in a jar in the fridge since 2 weeks ago. It's time to use it.
Balsamic Glazed Salmon with Coleslaw and Quinoa Oolah
Lentils Cabbage and Apples dish over Rice.
I will be using the other half of the package of Coleslaw for the Cabbage in this dish along with leftover Lentils I have in the fridge and I may even have some rice already in there.
Cheeseburgers and Air-Fries (remember my burgers are actually Bean Burgers)
Pasta Sausage and Cheese Dish with Fruit Salad
I have some leftover whipped cream topping from a cheat dessert that I will use in the fruit salad along with the last of the Greek Yogurt from last week.
And that's 5 dinners for this week, hopefully saving some food and some money at the same time while still eating well, in my opinion.
Hope you are finding ways to survive the weather no matter if you are getting flooded or scorched or even forced to evacuate. Geez, what a season we are having !!!
