First, here's the recipe. (I hate those recipe blogs where they have tons of pics and go on and on about the ordeal of cooking it first and save the actual recipe for way down the page after many scrollings.)
Ingredients:
2 TB EVOO [Extra Virgin Olive Oil]
1 can White Meat Chicken, not drained (12.5 oz can)
1 medium onion, chopped
1/2 tsp Garlic Powder
1/2 tsp red pepper flakes
3/4 tsp coriander
1/2 tsp cumin
1/2 tsp rosemary
2 cans white beans, (15.5 oz)1 can drained, rinsed, and smashed
1 can chicken broth (low sodium preferred)
8 oz or 1 bunch Kale leaves, chopped or torn. No stems.
4 TB nutritional yeast flakes or Parmesan cheese rind
1/3 cup White Wine
1 tsp lemon juice
Directions:
Sauté the onions in the oil over medium heat in a stew pot. When the onions appear translucent then add the can of chicken with the water. Add the herbs and spices. Stir well then add the undrained can of beans. Add the broth and bring back to a rumble. In the meantime, pour the drained can of beans into a bowl and smash with a fork or potato masher. Add the yeast flakes, the wine, and then the kale. Bring to a boil for 5 mins. Add the can of smashed beans. Stir well. Turn the heat to low, partially cover and cook for 25 mins. Turn the heat off, uncover. Finally, stir in the lemon juice.
