4th post Healthy Eating on a Budget

Here is the last post for now on this Series. Keep in mind that the initial cost for items will make the meal cost more than it will next time you make it as well as make other meals cost less. It's up to you if you feel that meal is worth the extra expense and it's also okay to leave out some ingredients. Substitutions are always an option.

This is another of my favorite meals. I don't serve this one often because it does cost a little more per serving than many of my other meals that are a little more budget friendly.

Bok Choy and Pearls

Ingredients:

1 bunch Bok Choy - washed and chopped (1" pieces) using tops and bottoms (all)

Half bag of frozen Pearl Onions (Pearls)

Half package of white mushrooms, sliced (buy whole, they are cheaper and slice)

Milk (about 2 quarts)

1/4 cup Low Sodium Soy Sauce

2 Potatoes, chopped

1/3 cup white wine (optional)

Directions:

Saute Bok Choy in large pot. Add the potatoes, Then add the pearls. Add the mushrooms. Once all heated then add enough milk to cover. Bring to boil, reduce heat to simmer and keep boiling. Cover and cook until tender. Add soy sauce, stir, cook another 2 minutes. Remove from heat and add wine, stir to combine and allow alcohol to cook off.

(Chickpeas can be added as another option).

Makes 4 servings. 147 cals 8g Protein 2g Fat 25g Carbs 3g Fiber

Cost:

3.57 Bok Choy Bunch

1.98 Frozen Pearl Onions

1.58 Whole White Mushrooms

1.58 Low Sodium Soy Sauce

1.84 5 lb bag of Russet Potatoes

1.67 Half Gallon of Whole Milk

3.46 Oak Leaf (or other cheap cheap) White Wine _ any kind

Total $12.68 or $3.17 per serving

Without the wine:

Total $9.22 or $2.30 per serving (That's budget friendly)

Again, you will have another half package of pearls, half package of mushrooms, lots of soy sauce, lots of potatoes. another half of your half gallon of milk left to use for other meals. If you divided the cost up into what you actually use for the meal it makes it pretty cheap.

And as you can see from the nutrition list, it is super healthy.
